We are so inspired by the farming model at La Ferme that we knew we had to plan a second night this year. This time, we set the table at their second farm in the magnificent Charlevoix region. This is a smaller property that follows the Hemmingford model with diversified market gardening and lamb farming on pasture. Guest chefs Émile and Sylvain return to the field kitchen after a knockout meal in 2019. At Faux Bergers, this team cooks the kind of obsessively locavore cuisine that celebrates the work of farmers. Their menu changes daily based on the very best of what’s available, meaning they’re well-equipped to make magic with the stunning meat and produce at La Ferme in Port-au-Persil. If we’re lucky, they’ll bring along some cheese – Faux Bergers sits inside a gorgeous farmhouse at a nearby sheep’s fromagerie.
