At a place like The Hickories, it’s good to settle in for two nights. The tour crew might need to hang their shoes to dry after Farmer Dina’s fly-fishing demonstration, and Farmer Laura’s beautiful flower bouquets deserve a second night on display. Guest chef Dan Sabia is a master of the wood-burning oven and admittedly loves playing with fire. He also loves carving cutting boards from upcycled wood, making all sorts of uniquely flavored vinegars, and jarring his own olives. His wood-fired setup is a supremely impressive sight and often includes a stone firepit and an Argentinean open-fire grill. The perfect complement to the farm’s pastured meat and summer vegetables.
