Guest chef Kelly Whitaker is a very big deal. He’s on the long list for Best Chef: Rocky Mountains at the 2020 James Beard Awards, and The Wolf’s Tailor made Bon Appetit’s Hot Ten list in 2019. All for good reason: at The Wolf’s Tailor, Kelly mills heirloom grains in-house and turns it into wood-fired piada bread and pasta; then he uses the leftover grain to ferment local vegetables. Needless to say, we’re thrilled to host him in the field kitchen at McArthur Gulch, where rolling grasslands, woodlands and wildlife encompass 480 acres of land protected by the Colorado State Land Board. This is an extraordinarily beautiful place and one of our most entrancing to date. After an informative stroll with the farmers, we’ll come up the rise to see the table revealed in a sweeping meadow of tall grass and wildflowers.
