Wakamatsu Farm is an historic California landmark and the original site of the Wakamatsu Tea and Silk Colony dating back to 1869. It’s considered the first Japanese colony in the U.S. and the birthplace of the very first Japanese American. It’s also a strikingly beautiful site with 272 acres of woodlands, wetlands and abundant wildlife in the rolling hills of El Dorado Gold Country. Two young farming couples lease land on the property. At Free Hand Farm, Spencer and Melissa raise pastured beef, lamb, raw milk and eggs; Kristen and William tend to a variety of organic vegetables at FogDog Farm. This is the larder for guest chef Russell Okubo, who continues the celebration of Japanese culture and heritage in the field kitchen. His restaurant, Aji, is known for its modern but authentic take on Japanese street food including sushi, grilled meats and ramen.
