Henequen, a type of agave used to make sisal as well as a fiery spirit, was once the major source of wealth throughout the Yucatan. About 15 miles from the centro of merida, our host Laura Kirar and her husband Richard Frazier have transformed an abandoned, former 17th Century henequen plantation into an elegantly rustic estate, the perfect setting for our long table. Laura Kirar is a renowned furniture and interior designer who collaborates with skilled artisans in Mexico to create work combining ages-old techniques infused with a modern sensibility. For your event, she will stage a pop-up shop of her tableware collection made from local materials including henequenes and jipi japa, a palm leaf. Chef Roberto Solis is a Mérida native who honed his craft in kitchens around the world, working with celebrated chefs in London (The Fat Duck), Copenhagen (Noma), New York (Per Se) and Tokyo (Narisawa). After years abroad, Roberto returned to Mérida with a mission to honor and elevate traditional Yucatecan cuisine, itself a smoky melange of indigenous Mayan foods and the international influences brought by the Dutch, French, and Spanish to the peninsula’s many port cities.
El henequén, un tipo de agave que se utiliza para fabricar sisal y una bebida espirituosa, fue en su día la principal fuente de riqueza en todo Yucatán. A unos 24 kilómetros del centro, nuestra anfitriona Laura Kirar y su marido Richard Frazier han transformado una antigua plantación de henequén abandonada que data del siglo XVII en una finca elegantemente rústica, el escenario perfecto para nuestra larga mesa. Laura Kirar es una artista y diseñadora que ha colaborado estrechamente con hábiles artesanos de México para expresar su trabajo práctico y conceptual. Para este evento, pondrá en escena una tienda pop-up de su colección de articulos de mesa. El chef Roberto Solís es nativo de Mérida y ha perfeccionado su arte en cocinas de todo el mundo, trabajando con célebres chefs en Londres (The Fat Duck), Copenhague (Noma), Nueva York (Per Se) y Tokio (Narisawa). Tras años en el extranjero, Roberto regresó a Mérida con la misión de honrar y elevar la cocina tradicional yucateca, que es una mezcla ahumada de alimentos mayas autóctonos y de las influencias internacionales que trajeron los holandeses, franceses y españoles a las numerosas ciudades portuarias de la península.
